The cookies dir can grow really big over time, even > 1gb...
Is there a way to know what files are really need just to keep the sites logged , so we can delete anything else ?

That's not an easy to answer question. It depends on each website.
I could suggest filtering all connections to known ad servers and trackers but I don't know if your application requires to log in any of them.
The cache size is controlled automatically by Chromium and I haven't tried the --disk-cache-size command line switch recently. It's supposed to limit the cache size but last time I checked it didn't work with CEF.
